Corn Poblano & Bacon Salad

Serve hot or cold. Enjoy as a side dish, salsa, or relish. Corn, poblano pepper, red bell pepper, red onion, smoked paprika & more!

Ingredients

    Directions

    Step1

    Cut corn off of the cobs.

    Step2

    In a large skillet cook bacon, drain, crumble and set aside. In the same skillet add butter, red onion, bell pepper, Anaheim or Poblano pepper and garlic. Sauté for a few minutes till vegetables soften.

    Step3

    Add in corn sautéing for a couple of minutes. I like my corn crisp so I don't cook it long, if you would like it soft, cook it longer.

    Step4

    Next add in paprika stirring until combined.

    Step5

    Add half and half and bacon back to the skillet, stirring until everything is combined. Salt to taste. Simmer for a few minutes then remove from heat and serve. This can be served hot or cold.
